Cutting Boneless Chicken Breast

Quite a few chicken recipes call for taking boneless chicken breasts and pounding the crud out of them between some wax paper to make them thinner. If you don't want to mess with pounding chicken and getting raw meat all over your work space, then there is another way to get thinner pieces of chicken. By slicing the boneless chicken breasts horizontally with a knife you will end up with two thin pieces. To do this, put a chicken breast on a cutting board and place the palm of your hand on top of it with your fingers curved up (see photo below). Take a sharp knife, starting at the thick end, cut the chicken in half sideways. Now you have two pieces of chicken about 1/4 inch thick. |
